Healthy Banana Bread Muffins
Only 9 ingredients and free from processed sugar.
350°, Bake: 25-30 min., Total Time: 45 min.
Ingredients
Wet
1/3 cup maple syrup
1/2 cup oil
2 eggs
1 cup mashed ripe bananas (~3 bananas)
1/2 cup greek yogurt
1 tsp vanilla
Dry
1.5 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup crushed walnut (optional)
Instructions:
1. In a large bowl, beat all the wet ingredients together. Blend well.
2. Add the dry ingredients and mix well.
3. (Optional) crush walnuts and add to batter.
4. Heat oven to 350°. Add baking cup liners to baking tin.
5. Add 3 Tbsp. of batter to each liner.
6. Bake for 25-30 min.
7. Let it cool for 5 min. and enjoy!
