Taylor Swift’s Pumpkin Chocolate Chip Cookies

Once upon a time, Taylor Swift was very active on Tumblr and would respond to fans’ inquiring minds. One fan asked Taylor what recipe she used to bake pumpkin chocolate chip cookies, and she revealed she uses many. Though she offered up a solid recipe she uses is through Food Network, recipe courtesy of George Duran. Rather than use milk chocolate chips, she uses semi sweet or dark chocolate bars that she chops into chunks.

Now, it’s a tradition for me to make these cookies once a year when the holidays come around. I used to use milk chocolate chips, because that’s what I used to prefer taste and texture wise. I recently switched to semi sweet chocolate bars that I cut into chunks. Gotta say, chunks > chips now. Also, chocolate chip cookies are my all time favorite! If you love chocolate chip cookies as much as I do, you may find this video fascinating by Mythical Kitchen. They compare: 1) creaming v. no creaming, 2) chip v. chunk v. wafer, 3) white sugar v. brown sugar v. half+half, and 4) frozen v. refrigerated v. room temp. I definitely want to try baking with chocolate wafers, because I’ve never done it before!

350° F, Bake: 15-20 minutes, Total Time: 1 hour

Ingredients:

1 cup (2 sticks) unsalted butter, softened

  • 1/2 cup white sugar (this is 1/2 the amount than the original)

  • 1/2 cup light brown sugar (this is 1/2 the amount than the original)

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 cup canned pumpkin puree

  • 3 cups all-purpose flour

  • 2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground nutmet

  • 1/4 tsp ground cloves

  • 2 bars Ghirardelli semi-sweet bars, cut into chunks

Instructions:

1. Use a mixer, beat butter until smooth.

2. Beat in white and brown sugars, a little at a time, until mixture is light and fluffy

3. Beat in eggs, 1 at a time.

4. Mix in vanilla extract and pumpkin.

5. In a large bowl, whisk together the flour, banking soda, salt, cinnamon, ginger, nutmeg and cloves.

6. Slowly beat the flour mixture into the batter in thirds.

7. Stir in the chocolate chips!

8. Heat oven to 350° F.

9. Scoop the cookie dough (~1 Tbsp size) onto prepared cookie sheets.

10. Bake 15-20 min, or until cookies are browned around the edges.

11. Remove cookie sheets from over and let them rest for 2 minutes.

12. Take off cookies w/ spatula and cool on wire racks.
